Been too long. I can’t remember who got copies of Em’s Handbook. Her offspring copied recipes from her files & asked her for changes. We watched her – (handfuls converted to tsps. etc.). We tried to get her to make her recipes using her Handbook to catch errors – all in vane. So when a recent attempt at making Em’s dinner rolls led to puzzlement, a remake was called for — (no starter for yeast, no oven temp or time to cook!)
So if you have a handbook replace this page. If you don’t enjoy some wonderful dinner rolls one of these days. In italics we have added a few tips that help, we think.
Raised Rolls
(Em’s Dinner Rolls)
For success in baking bread and rolls, select a basic recipe; master it, then develop any variations you desire.
1. Dough for rolls is softer than for plain bread, as soft as can be handled without sticking to hands or board.
2. Most rolls require only thorough mixing, with little or no kneading.
3. If crusty rolls are preferred, place 1 inch apart when baking.
4. Rolls should be served at once or turned out of pans to cool.
5. To reheat, place rolls in plain paper bag, sprinkle bag lightly with water, and place in hot oven 3 to 5 minutes before serving.
1 Cup Canned Milk 1 pkg Yeast
4 Tb Marg 4 Tb Sugar
¼ Cup Lukewarm Water 1 tsp Salt
1 Egg – well-beaten 3 ½ Cup Flour
Set yeast to soften in luke warm water.
Heat Margarine to melt, combine with shortening, sugar, and salt; and enough milk to cool to “baby-bottle warm” (110- 115°). Add yeast mixture. Let yeast work. Add any remaining milk & egg. Gradually stir in flour to form soft dough. Beat vigorously; and knead slightly. Cover and let rise in warm place until doubled in bulk, up to 2 hours. I often heat oven to 200 then turn off & set rolls in. (Another option – You can use the microwave. Just heat water in a measuring cup for 2-3 minutes and when it is off, quickly place the dough in the microwave oven – moisture helps the rise.)
Turn out on lightly floured surface and proceed as desired to shape.
Raise a second time to double.
I just cut out with round cutter and place on pan with a little space for rising but you could try something like putting 3 balls in greased muffin tin or whatever shape sounds fun.
Cook at 375 for 10-12 minutes (Those who don’t have Em’s touch for “baby-bottle warm” can use a thermometer probe to measure yeast temperature. Also rolls are done when interior reaches 225 degrees.)
